Overnight Yogurt Oats


I am a big fan of oats and I usually like to start my day with a jar of overnight oats with milk, fruits, nuts and berries. No cooking and easy breakfast is what makes this Overnight Oats in a jar really interesting. So one day I thought why not try out a savoury version of the overnight oats and I came up with this Overnight Yogurt Oats. This is inspired by the popular South Indian dish called Curd rice (Thayir sadam)

Ingredients

  • 3/4 cup Oats

  • 1 cup Yogurt (low fat)

  • 1/4 cup skimmed Milk

  • 1 tsp Oil for tempering

  • 1/2 tsp Mustard Seeds

  • 1/2 tsp Cumin Seeds

  • 1 tsp Urad Dal

  • 1 chopped Green Chili

  • 1 spring Curry Leaves

  • 1 tbsp finely chopped Onion

  • 1/2 tsp finely chopped Ginger

  • 1/2 tsp Coriander Leaves

  • Himalayan Salt to taste

Take a clean jar with a lid (I love using empty Nutella jars for my overnight oats). Mix the yogurt with some milk and add it to the oats. Prepare the tempering by heating oil in a small pan and adding the mustard seeds, cumin seeds, urad dal lentils, green chilli, onion, curry leaves, ginger and coriander leaves. Pour the tempering over the oats curd and mix well. Transfer the curd oats into the jars and refrigerate it overnight. Your overnight Yogurt Oats will be ready to eat in the morning. Garnish with pomegranate seeds, some pickle and enjoy.

Tip: You can adjust the amount of yogurt and milk according to the consistency you want. If you find the oats has soaked up most of the liquid over night, simply add a little milk or yogurt in the morning and give it a mix.
